Combine the oats, peanut butter, honey/maple syrup, cocoa powder, melted coconut oil, vanilla extract, salt, and baking soda in a large mixing basin. Make sure everything is mixed together by stirring it for a while.
Blend in the chocolate chunks for a more pronounced chocolate flavor. All you chocolate lovers out there should definitely do this.
When everything is incorporated, put it in a baking dish that’s 8 inches square and lined with parchment paper. Firmly press the mixture into the dish using a spatula or the back of a spoon.
Refrigerate the dish for at least 2 hours, or until the bars have reached the desired firmness and consistency. The oats will soften, and the tastes will blend if you do this.
When the bars have a cold and hardened, take them out of the dish using the parchment paper and lift it. Put them on a chopping board and slice them into the shapes you choose.
The No-Bake Chocolate Oat Bars may be eaten fresh out of the oven, or they can be refrigerated and stored in an airtight container for up to a week. These bars may be made in advance, stored in the freezer, and enjoyed anytime a fast and delicious snack is desired
