  • 1 (15 oz) can black beans, drained & rinsed
  • 1 cup frozen corn
  • 2 cups chicken or beef broth
  • 1 tbsp taco seasoning (or homemade blend: 1 tsp cumin, 1 tsp chili powder, ½ tsp paprika, ½ tsp garlic powder)
  • ½ tsp salt (adjust to taste)
  • 1 cup shredded Mexican cheese blend
  • Toppings: Fresh cilantro, diced avocado, sour cream, lime wedges

Instructions:

  1. Sauté the meat & veggies:
